The food reaches the desired temperature more quickly because of the large heat exchange surface area.

Heat, as well as cold , is evenly distributed and can be controlled with extreme precision, whether to activate the Maillard reaction or to bring the product back to a specific processing temperature.

Scraping spatulas continuously amalgamate the food, ensuring cooking uniformity and keeping cooking surfaces clean at all times.

CookTymix has an innovative cooling system that allows the product to be cooked and then cooled without having to move it.

 
Once cooked, the product is cooled down thanks to the large exchange surface area to the desired temperature in a sterile environment with an energy saving of about 50 per cent. If you want to cool an already cooked product, you can place it hot in CookTymix and cool it in no time. 

 

Example: Cooking for 250 kg of product - Time: 20 minutes 

Cooling down to 25°C - Time: approx. 23 minutes.
